Having been rather over-shadowed in recent years by Prosecco, Cava is due for a revival and the Pont de Ferro is a great place to start, especially when matching with Spanish cuisine.
About The Grower Pont de Ferro
Based in Catalonia and the town of Penedes, Pont de Ferro's Cava is made using the traditional Cava blend of Parellada, Xarel-Lo and Macabeo, from locally sourced grapes grown on calcareous and sandy loam soils - the hot Spanish climate ensures grapes are ripened fully before harvesting by hand and rigorously selected before transferal to the winery.
Vinified using the traditional method of sparkling wine production - base wines are fermented separately in stainless steel before being blended by Ferro's cellarmaster to achieve the house style. The cuvee then undergoes secondary fermentation in bottle and is aged on its lees in order to obtain the yeasty, autolytic note so characteristic of traditional method sparkling wines.
About The Region Penedés
Penedés is a wine producing region in north-east Spain within Catalonia. Penedés DO is surrounded by mountains including the Serra del Garraf and is viewed by many as one of the country's finest regions for wine-production after Spain's most famous, Rioja. The region produces many fine white wines and several excellent examples of (usually oak-aged) red wine, but is most famous for the country's signature sparkling wine, Cava, which has been a DO, Denominació d'Origen since 1991.
About The Grape Variety Macabeo / Viura
Macabeo is Northern Spain's most popular white grape variety, also often seen in southern France's Languedoc. It produces wines of a floral, aromatic nature with relatively low acidity, and it is particularly resistant to oxidation. It is widely used in Spain's Rioja, (where it is known as Viura) and represents over 90% of white grapes planted in the region, all but displacing Malvasia and Garnacha Blanca after its post-phylloxera introduction.
