Domaine de la Chapelle
Domaine de la Chapelle can be found in the heart of Pouilly-Fuissé, where Pascal Rollet and his wife Catherine, and son, Thomas manage the small estate. Each wine produced at the vineyard is a true reflection of the terroir, as mineral and floral notes flow through followed by a strong structure. Wines from La Chapelle have been recognised among the best wines in the region by Wine Spectator, Wine Advocate, Guide Hachette.
The age of the vines of Domaine de la Chapelle is approximately 57 years. This ensures highly concentrated grapes for better wines. The south-east facing microclimate, paired with the clay and limestone marl allows the Chardonnay grape to fully express itself.
The vineyard adapt modern techniques to traditional methods to ensure consistent quality wines. Including the precise dosage of oxygenation, pumping over, temperatures, nitrogen inerting. The ageing on the lees in wine barrels lasts a minimum of 12 months, with 2 monthly bâtonnages. The wines are then transferred to tanks, with lees, for a further 4 to 6 months before bottling.
The cultivated surface corresponds to 3.80 hectares of Pouilly-Fuissé, 1.45 of Mâcon-Solutré-Pouilly and 2,05 hectares of Saint-Véran. The mode of the culture of the vineyard remains very traditional, ploughing of the grounds (2 to 3 passages per year), manures are exclusively organic, extensive pruning and growing grass under young vineyards (simple Guyot); no insecticidal treatment has been used for 22 years. Harvest is entirely manual, sorted on the spot by a team of harvesters faithful to the Estate for years. Several parcels are harvested twice (two passages) for a better maturation of the grapes.
The entire cellar is thermo-regulated, including barrels to extract the most subtle flavours during the winemaking. All yeasts of winemaking are also natural, issued from the Estate, not cultured.
The passion began and remains the motive of the Estate to ensure exceptional quality wines and regularity each year.
