A fantastic example of a cool-climate Pinot. Light to medium body, full of red cherry and summer fruits which gives a lovely complexity to the bouquet and palate. Pairs extremely well with chicken, rabbit, game birds, pork and duck.The hand-picked Pinot Noir grapes were crushed then cold-soaked for 48 hours to extract primary fruit aromas. The wine was then fermented on the skins for 7 days at 20-23°C, enabling colour, flavour and tannin extraction.
