Moulin des Vignes’ Chardonnay and Merlot grapes are sourced from high-quality parcels of land in the villages of Pezenas and Montpeyroux respectively. Soils are a combination of chalk and clay and vineyards are low-yielding, ensuring good concentration of fruit. The climate is characteristically warm, but tempered by the proximity of the Mediterranean.Grapes are harvested at dawn while the air is cool. Chardonnay then undergoes a brief period (6 hours) of skin contact before being racked and cool fermented. Malolactic fermentation is then induced and the wine is then matured on its lees for 6-9 months.Merlot is cold-macerated for 10 days before being fermented at a relatively cool 22 degrees – extraction is achieved by punching down and free run wine is then blended with a selection of the first pressing. The final blend then undergoes micro-oxygenation to achieve its resulting softness and approachability.
