La Cachette de Parsifal
This delicious blend of Cabernet Sauvignon and Syrah is made exclusively for Jascots in the Coteaux du Languedoc, just outside the town of St Chinian.The climate here is arid and dry, and soils are composed largely of schist, with limestone and clay dominating in the immediate environs of the town. Yields are relatively low and grapes have a distinct minerality and soft,approachable fruit as a result of the local terroir. The Cabernet Sauvignon and Syrah grapes come from a warm part of the Languedoc, near Béziers, but benefit from the strong tempering influence of the Mediterranean. The naturally low yield and the climate allow the grapes to reach full phenolic ripeness, giving the wine a delicious smoothness.Vinification is carried out traditionally, in concrete vats, under temperature controlled conditions with specially selected yeasts. Once fermentation is complete, the wine is oak-aged for several months before bottling and release.
