Champagne Piollot
Champagne Piollot can trace their history back to the mid-1800s to Athanase Piollot, who was the first member of the family recorded as living and working as a vigneron in Polisot, in the Aube. Today, the estate is based on the principle of parcel selection – Robert Piollot (current proprietor Roland’s father) was very passionate about vineyards and old vines - in the 1950s began increasing the number of parcels under the domaines’ ownership and re-planting with only selection massale. In 1955 he even cleared and re-planted the ‘Val Colas’ vineyard by hand with 100% Pinot Blanc, at a time when most other growers were pulling out their Pinot Blanc and replacing with Pinot Noir or Chardonnay. In 1985, Roland Piollot took over the domaine from his father, and in 2009 began conversion to organic farming. Organic certification was gained in 2014, and the estate is now also fully biodynamic. Somewhat unusually for a Champagne grower, all of Domaine Piollot’s cuvees are single varietal, parcel selection wines, and most of the vineyards are over 40 years old. As Roland himself says; "Feeling, breathing, evolving with observation are what has pushed us down this road" as well as the perseverance and dedication with which Roland and his father work on these grapes and these vines.
