Winemaker and proprietor Jerome Vic's estate is situated at the north-west of Vias, separated from the sea by an old volcano, Roque Haute, in the Hérault departement of the Languedoc-Roussillon.Jerome's vineyards are well balanced between young and old vines at an average age of 25 years old. Water is rationed during the growing season between May - September, encouraging the vines to limit their number of berries and forcing the roots to penetrate deep into the subsoil in search of water and nutrients, and this, combined with restrictive canopy management ensures that grapes easily reach their full ripeness, resulting in full-bodied and spicy wines characteristic of the region.Typical of the local geography, vineyards are situated near to naturally occurring 'garrigue' plants such as thyme, lavender and rosemary, which naturally impart their gentle, fragrant aromatic characteristics to the vines, and which is hinted at in the final wine.
