Spier 21 Gables Sauvignon Blanc 2022. Hand-harvested from cool-climate Tygerberg vineyards near the Atlantic, the grapes were picked at varying ripeness for complexity. After gentle pressing and six hours of skin contact, the free-run juice fermented slowly and matured for 4 months on lees to enhance texture and depth. Unwooded, dry, and crafted for elegance and longevity, this wine can age gracefully for up to a decade.
