This traditional method of sparkling wine production originates from Stellenbosch’s high-altitude vineyards, situated on Escourt and Glen Rosa soils, which benefit from cool night temperatures and strong Atlantic breezes. Its fine mousse and golden hue introduce aromas of green apple and citrus over a backdrop of biscuit. The mouthfeel is balanced and energetic, with crisp acidity framing fruit intensity. With 23 months of ageing, it offers celebratory finesse and pairs beautifully with seafood or canapés.
