Spier Cap Classique Prestige Cuvee 2018. Crafted from 60% Chardonnay and 40% Pinot Noir grown in the Western Cape, this vintage sparkling wine is made in the traditional Méthode Cap Classique style. Grapes were hand-harvested and whole-bunch pressed, with fermentation in stainless steel tanks before secondary fermentation in the bottle. The wine matured on the lees for extended complexity, resulting in a crisp, elegant profile. Pale straw in color with a fine mousse, it offers vibrant freshness and racy acidity, finishing with a delicate minerality.
