Spier 21 Gables Cabernet Sauvignon 2019. Set on the last farm before the crest of Helderberg in Stellenbosch, these old-vine Cabernet Sauvignon grapes thrive on the northerly slopes of decomposed granite with a clay subsoil, cooled by Atlantic breezes that slow down the ripening process. The 2019 vintage pours a deep ruby red with a youthful edge, greeting the nose with layers of cassis and violet, drifting into aromatic cedar and a refined hint of pencil lead. On the palate, concentrated blackberries and cedar notes unfold in waves, seamlessly interwoven together by smooth yet robust tannins, culminating in a generous and lingering finish. Structured and classy, this wine is already showing lovely secondary notes, promising a graceful evolution with several years of bottle age.
